  • 500 g Cooked brown lentils
  • 150 g Feta cheese
    crumbled

  • 40 g Walnuts
    optional, chopped
  • 60 ml Olive oil
    extra virgin

Instructions

    Mince 1 cloves Garlic, dice 1 pcs Bell peppers and 150 g Cucumber, quarter 150 g Cherry tomatoes, mince ½ pcs Red onion, chop 15 g Parsley, and tear 2 tbsp Fresh mint and 2 tbsp Fresh Dill.

    Whisk 60 ml Olive oil, 2 tbsp Lemon juice, 1 tbsp Dijon mustard, Garlic, 1 tsp Dried oregano, ¼ tsp Salt, and ½ tsp Black pepper until evenly mixed.

    Add 500 g Cooked brown lentils, Bell peppers, Cherry tomatoes, Cucumber, Red onion, 40 g Walnuts, 45 g Kalamata olives, Parsley, Fresh mint, and Fresh Dill to a large bowl.

    Stir the lentil mixture until evenly combined.

    Pour the dressing over the lentil mixture.

    Stir until the salad is evenly coated.

    Add 150 g Feta cheese.

    Gently toss until evenly mixed.

    Transfer to airtight meal-prep containers and refrigerate. Store lentil salad in an airtight container and refrigerate for up to 5 days. This salad is best fresh, but you can also store it in a freezer-safe bag and freeze for up to 3 months if needed. Thaw frozen salad in the refrigerator overnight.
