  • 500 g Lean ground beef
  • 300 g Long-grain rice
  • 750 ml Beef stock
    from stock cubes
  • 30 g Tomato paste
  • 2 tbsp Taco seasoning
  • 70 g Shredded cheddar cheese
    reduced-fat
  • Salt
  • Black pepper

Instructions

    Heat a large deep pan over medium-high heat. Add 500 g Lean ground beef and cook, breaking it up, until browned.

    Stir in 2 tbsp Taco seasoning and 30 g Tomato paste. Cook, stirring, until fragrant and well combined.

    Add 300 g Long-grain rice (uncooked) and 750 ml Beef stock. Stir well and bring to a gentle simmer.

    Reduce heat to medium-low, cover, and simmer for about 10 minutes, stirring occasionally, until the rice is tender and most liquid is absorbed.

    Sprinkle 70 g Shredded cheddar cheese over the top. Cover for about 3 minutes until melted.

    Stir, season with Salt and Black pepper to taste, then portion into meal prep containers.
