  • 1,000 g Potatoes
    cut small
  • 400 g Lean ground beef
  • 120 g Shredded gouda cheese
    light
  • 200 g Sour Cream
  • 1 pcs Onions
    diced
  • 1 pcs Bell peppers
    red, diced
  • 1 can Crushed Tomatoes
    canned
  • 1 can Kidney beans
    canned, drained
  • 1 can Sweet corn
    small can, drained
  • Taco seasoning
    to taste
  • 1 tbsp Olive oil

    Cut 1,000 g Potatoes into small cubes.

    Bake the Potatoes in the oven at 390 °F for 20 minutes.

    Dice 1 pcs Onions and 1 pcs Bell peppers.

    Brown the 400 g Lean ground beef in a large pan with 1 tbsp Olive oil

    Add the Onions to the pan and cook until softened.

    Add the Bell peppers, 1 can Crushed Tomatoes, 1 can Kidney beans and 1 can Sweet corn to the pan.

    Season with Taco seasoning and stir everything together until heated through.

    Add the baked Potatoes to meal-prep containers.

    Spoon the beef and bean mixture over the Potatoes.

    Top with 200 g Sour Cream and 120 g Shredded gouda cheese.
