Chop
2 pcs Sweet Potatoes into small cubes.
Dice
80 g Onions and
1 pcs Bell peppers, mince
3 cloves Garlic, rinse
180 g Red lentils, and chop
120 g Spinach Leaves.
Heat
2 tbsp Grapeseed oil in a large skillet over medium-high heat.
Add
Sweet Potatoes and cook, stirring occasionally, until browned.
Move
Sweet Potatoes to one side of the pan and reduce the heat to medium-low.
Add
2 tbsp Grapeseed oil,
Onions, and
Bell peppers.
Cook, stirring occasionally, until
Onions is soft and translucent.
Stir in minced
Garlic,
1 tbsp Ground Ginger,
1 tbsp Curry powder,
1 tsp Ground turmeric, and
½ tsp Cayenne pepper.
Cook until fragrant.
Add
180 g Red lentils with enough water to cover them. Then bring to a boil over high heat. Add
½ tsp Salt.
Reduce the heat to medium-low and simmer uncovered, stirring occasionally, until
Red lentils are tender.
Stir in
400 ml Coconut milk.
Simmer, stirring occasionally, until the liquid is reduced and
Red lentils are creamy. Stir more often near the end to prevent sticking.
Stir in
120 g Spinach Leaves.
Cook until
Spinach Leaves is wilted.
Turn off the heat and adjust the seasoning to taste.
Serve with cooked
Rice,
Lime,
Fresh cilantro, and
Fresh mint if desired.
