Slice
1 pcs Zucchini and
1 pcs Yellow squash into half-rounds. Slice
1 pcs Bell peppers and
1 pcs Red onion into strips.
Place all the prepared vegetables in a large bowl.
Slice
400 g Krakauer sausage into rounds.
Heat
1 tbsp Cooking oil in a large skillet over medium heat. Add the
Krakauer sausage and cook until well browned.
Transfer the browned
Krakauer sausage to a clean bowl, leaving the flavorful residue in the skillet.
Drizzle the vegetables with
1 tbsp Cooking oil. Add the
½ tsp Smoked paprika,
¼ tsp Garlic powder,
¼ tsp Cayenne pepper,
¼ tsp Salt, and
¼ tsp Black pepper, then toss until evenly coated.
Return the unwashed skillet to medium-high heat and let it become very hot.
Add the vegetables and sauté just until slightly tender. Avoid overcooking them so they retain their texture when reheated.
Remove the skillet from the heat. Add the cooked
Krakauer sausage and
2 tbsp Parsley (chopped), then toss to combine.
Taste and adjust the seasoning if needed.
Serve immediately or portion into meal-prep containers and refrigerate until ready to eat.
