
High-Protein Skyr Cake
A light, high-protein skyr cheesecake without protein powder, sweetened with erythritol and finished with a sugar-free mandarin topping. Great for meal prep and snacking.
High-protein Skyr dumplings served with a creamy vanilla sauce. Healthy and tasty.

For the dough: Combine
250 g Skyr,
150 g Spelt flour and
7 g Psyllium husks in a bowl.
Then shape dumplings and fill them with 2-3
Frozen raspberries for each dumpling.
Bring a pot of water to a boil and then reduce to low heat so the water is not boiling. Add the dumplings; they are done when they float to the surface.
For the vanilla sauce, whisk
20 ml Almond milk with
1 ½ tsp Vanilla pudding powder until smooth. Bring the rest (
180 ml Almond milk) to a boil and then stir the mixture in and cook until it thickens a bit. If it becomes too thick, stir in almond milk a little at a time.
Optional: You can also add some sugar to the sauce.
